At the olfactory analysis, “Le Vie Bianche” oil results green and fruity, with a medium intensity, along with vegetable nuances of grass and apple. At the flavor analysis, it presents a pleasant bitter nuance of artichoke, chicory and herbs enhanced by slightly stronger spicy nuances. The good harmony of bitter and spicy makes it very well-balanced.
The intensity of the fruity, the bitter and the spicy, all medium-light, makes it very versatile. It is excellent for legumes soups, even the most delicate ones, like “pasta e ceci” or lentils soups.
It is perfect to put on fishes, for example on grilled tuna or swordfish, scented with savory and lemon peel, or in combination with white meats and savoury salads of arugula, “misticanza” or radicchio.
